1/4tsSalt
1cWater
2cSugar
5 2/3cDesiccated coconut
3/4cChopped candied cherries & pineapple
3/4cRaisins
3/4cChopped pecans
  Milk chocolate

Try this chewy, homemade coconut candy for a special treat.

In a saucepan combine corn syrup, salt, water, and sugar. Cover tightly and bring to a rolling boil. Remove lid, place thermomter in pan and cook to 236 degrees F. Place coconut, candied fruit, raisins and pecans in a large bowl and mix well. Pour cooked syrup over fruit and nuts; mix thoroughly. Pour out onto buttered marble slab and pack into a 3/8-inch thick square shape. Cool, slice into bar shapes. Let dry, then dip in sweet chocolate. Makes about 60 bars.
